Strawberry Mojito

1/2 lb washed and stemmed strawberries

1/4 cup lime juice

1/4 cup simple syrup

1 large stem of mint (leaves, stem and all)

3/4 cup white rum

Seltzer water

Combine all ingredients in blender and blend until smooth. Pour 3/4 full into Collins glass with ice and top with seltzer water. Garnish with strawberry and mint.
